Overview

Louisiana feeds you before it even finishes introducing itself: gumbo simmering on every corner of the French Quarter, jazz drifting from doorways, sugar dusted beignets waiting at Café du Monde. Spend your first nights learning proper Creole cooking, then follow the smokehouses of the Andouille Trail out into plantation country for a stay among the oaks at Oak Alley. Push on to Baton Rouge and into Lafayette, the beating heart of Cajun country, calling in at Avery Island for the story behind Tabasco on the way. By the time you reach a Louisiana distillery on the road to Lake Charles, boudin, cracklins and zydeco will feel like old friends.

Day 1: UK - New Orleans

Days 1 - 4: New Orleans

Settle into the Bourbon Orleans Hotel in the heart of the French Quarter and give yourself over to New Orleans. Wander streets that smell of chicory coffee and warm sugar, stop at Café du Monde for beignets, and let a bowl of gumbo or a plate of jambalaya introduce you to the city's Creole roots. A cooking class puts you behind the stove with a local chef, learning the roux and the trinity of onion, celery and pepper that anchors so much of this cuisine. In the evening, follow the sound of a trumpet into a Frenchmen Street jazz club and let the city do the rest.

Days 4 - 5: New Orleans - Houma

Head out of the city and into bayou country, following the smokehouses of the Andouille Trail along the way. This is Cajun cooking at its most traditional, spicy sausage smoked over pecan wood in small operations that have been run by the same families for generations. Arrive in Houma, a Cajun fishing town threaded with waterways, and settle in for the night with a plate of something local to try before bed.

Days 5 - 6: Houma - Plantation Country

Days 6 - 8: Plantation Country - Baton Rouge

Days 8 - 11: Baton Rouge - Lafayette

On the way to Lafayette, stop at Avery Island for the Tabasco Island Experience, and learn how a Louisiana pepper sauce made since 1868 found its way onto tables around the world. Lafayette is the heart of Cajun country, and your three nights here include a guided Cajun Food Tour through boudin balls, cracklins, gumbo and whatever else the day's kitchens are turning out. In the evening, follow the sound of accordion and washboard into a local zydeco dancehall.
